Cajun Blackened Catfish

One of Dinah's favorites!
Servings: 4

Ingredients
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp parsley flakes
1 tsp salt
1 tsp ground red pepper ... although I use just a pinch
1/2 tsp oregano leaves
1/2 tsp thyme leaves
2 servings catfish
1/2 TB butter
Directions
Heat cast iron pan upside-down over a burner on medium heat; when heated through, switch to right-side-up.
Dredge fish in spices.
Melt the butter in the pan then cook catfish about 2-3 minutes per side.
