Mediterranean Succotash

Description:
A very tasty side dish; goes well with seafood.

Ingredients
2 TB olive oil (OPTIONAL - just use a nonstick pan and save your waist the calories!)
2 cloves garlic, chopped
1 medium bell pepper - yellow, red, or green - seeded and chopped
1 can of corn, drained
1 can (15 oz) butter beans, drained
salt and pepper to taste
3 TB chopped fresh parsley
Directions
Heat skillet over medium-high heat.
Add oil (or use nonstick skilled, sprayed lightly w/ spray), garlic, and peppers
Saute, stirring frequently, about 5 minutes.
Add corn & beans, and heat through (1-2 minutes).
Season w/ salt and pepper, stir in parsley, and serve.
