Baked Fish with Mushrooms

Easy, quick, and pretty well any fish will taste great with this recipe.

Ingredients
2 servings fish fillets, 1/2 to 3/4 inch thick OR just spray the pan w/ nonstick
1 TB butter or margarine
1 1/2 cups sliced fresh mushrooms (or more, or less, depending on how much you like them!)
2 TB sliced green onions
1 tsp snipped fresh tarragon or thyme, OR 1/4 tsp dried tarragon or thyme
Directions
Preheat oven to 450°.
Rinse the fish and pat it dry with paper towels.
Arrnge fish in a baking dish that allows for the fillets to lay side-by-side. Turn under any thin edges.
Sprinkle with salt.
In a small saucepan, melt butter OR spray w/ nonstick. Add mushrooms, green onions, and dried spice (if using).
Cook over medium heat until mushrooms and green onions are tender. Spoon mushroom mixture over fish; sprinkle fresh tarragon on top (if using).
Bake in 450° oven for 12 to 18 minutes, or until fish flakes easily when tested with a fork.
