Stuffed Grilled Zucchini

A great summer side dish.

2 medium zucchini

2 tsp. olive oil

1 TB finely chopped red onion (though any sort of onion will do)

1/8 tsp. minced garlic

1/4 c. dry bread crumbs

1/4 c. shredded mozzarella cheese

1/2 TB minced fresh mint

1/2 tsp. salt

3 TB grated Parmesan cheese


Cut zucchini in half lengthwise; scoop out pulp, leaving 1/4" shells. Brush with 1 tsp. olive oil and set aside.

Chop pulp; saute in a large skillet with onion in the remaining 1 tsp. of olive oil. Cook until tender. 

Add garlic, and cook one minute more.

Add bread crumbs, and cook while stirring for 2 minutes, or until golden brown.

Remove from the heat, and stir in the mozzarella cheese, mint, and salt.

Spoon into zucchini shells.

Sprinkle with Parmesan cheese.

Grill, covered, over medium heat for 8 - 10 minutes or until zucchini is tender.
