Banana - Peanut Butter Cookies

This recipe was on a bag of too-ripe bananas I bought when I first moved to Raleigh.
Ingredients
1 1/2 c. all-purpose flour
1/2 tsp. baking soda
1 ripe banana, mashed
1/3 c. firmly packed light brown sugar
1/4 c. margarine
1/4 c. peanut butter (creamy or crunchy)
1 large egg
1 tsp. vanilla extract
Directions
Preheat oven to 375°.
Spray baking sheets with vegetable cooking spray.
Combine flour and baking soda in a small bowl.
In a medium mixing bowl, beat together banana, brown sugar, margarine, and peanut butter until light and fluffy.
Beat in egg and vanilla.
Gradually beat flour mixture into the wet mixture until a dough forms.
Shape dough into 1-inch balls, placing them 2 inches apart on the baking sheets.
Using the tines of a fork dipped in flour, press a crisscross pattern onto each cookie.
Bake cookies in batches until edges are set, about 10 minutes.
Place baking sheets on wire racks and cool for about 5 minutes.
Makes about 45 cookies.
