Stuffed Squash/Zucchini Boats

Ingredients

3 medium squash or zucchini

2 TB butter

1/4 pound chopped mushrooms

1 small onion, chopped

2 TB flour

1/2 tsp salt

1/4 tsp oregano

1 cup pepper-jack cheese

2 TB sour cream

1/4 cup Parmesan cheese

Directions

Cook squash in boiling salted water, covered, for 10 to 12 minutes. Do not overcook.

Drain and rinse the squash in cold water.

Cut squash in half lengthwise immediately. Scoop out centers, leaving a 1/4 inch thick shell. Chop centers and reserve.

In a medium skillet, melt butter and saute chopped mushrooms and onions. Stir in flour, salt, and oregano.

Remove from heat.

Stir in pepper-jack cheese, sour cream, and chopped centers.

Fill shells that have been thoroughly patted dry. Top with Parmesan cheese.

Broil 3 to 5 lminutes until hot and bubbly.

 

Note: you may assemble these in advance and refrigerate them, saving the broiling for just before serving. However, you will need to increase broiler time by 5 to 6 minutes.
