Stuffed Squash
Submitted by: JustRightMenus
Description:
I have added measurements - the original recipe did not include any. This isn't a recipe that you have to be careful with, though. Use more or less of any ingredient, to taste.

Ingredients
1 whole squash (summer squash or zucchini work best)
1/2 onion, sliced
1/4 cup shredded cheese
1/4 cup seasoned bread crumbs
Directions
Boil the squash. Once it's soft, take it out, spllit in 1/2 lengthwise, and scoop out the insides so it's hollow. Keep the stems apart - you won't be using them.
While the squash is boiling, saute the onions.
Put the insides of the squash in a bowl, and chop them up.
Mix in the sauteed onions, cheese, and bread crumbs to taste.
Stuff the mixture back into the squash shell, adding a little extra cheese and/or bread crumbs on top.
Bake in the oven at 350° for a few minutes.
