Polynesian Chicken (serves 2)

Recipe from mom, modified to serve just 2 people. Goes great with Roasted Pineapple.

1/2 lb. boneless chicken breast, diced

1 TB low sodium soy sauce

2 tsp honey

1/2 tsp Hoisin sauce

1/8 to 1/4 tsp ginger

1 large green onion, sliced in 1/4" pieces

2 TB cilantro, max.



Mix all but the green onions and cilantro.

Bake 35 minutes at 375.

Sprinkle on the gronions and cilantro, and serve.

Goes well with side dishes of rice and of Roasted Pineapple.
