Easy Fresh Corn Salad

I've tried many corn salad recipes, but this one is my favorite.

Ingredients
1 c. corn kernels (2 ears yields about 1 cup)
1/2 tsp red wine vinegar
1 tsp olive oil
1/2 tsp seasoning mix (I use Yah's Best: Herbal Delight or Bread Dipping Spices, but you can use just about anything!)
1 green onion, sliced thinly
1/8 green pepper
Directions
If you're starting with fresh ears of corn, remove the outer husk. Just leave the enough of the husk to cover the corn in 1 to 2 layers.
Microwave the corn - just as it is, no water, nothing - for about 2 minutes. The goal is the equivalent amount of cooking to blanching.
Remove the husk and corn silk, then slice the kernels off the cob. Don't slice down so far that you're getting the husk!
Mix the corn together with the remaining ingredients.
Allow to chill in the refrigerator about 30 minutes before serving.
