Stir Fry from Leftovers

Nothing fancy ... just using up that bit of meat & veggies

Ingredients

2 servings of leftover meat - chicken, beef, ham, whatever you have on hand - diced

2 servings of leftover vegetables - peas, corn, onion, bok choy, eggplant, zucchini, carrots, whatever you have on hand

2 servings of rice

1/2 TB oil

1 clove garlic, minced

1/4 onion, sliced

1 TB soy sauce

1/8 tsp powdered ginger

Directions

Heat the oil in a frying pan.

Add the garlic and onion to the hot oil, cook for a couple of minutes.

Add your meat to the pan, get it nice & hot, then remove from the pan.

Add vegetables to the pan ... add hard, raw veggies first (like carrots) and the softest veggies last (like peas).

Return the meat to the pan, add soy sauce & ginger, and you're done!
