Cranberry/Fruit Coleslaw

Description:

Alternate dressing: combine roughly equal parts Poppyseed Dressing and mayonnaise, add an extra splash of cider vinegar, and whisk together. Tastes amazing!

Also, since I'm a big fan of using all those leftover bits of this-and-that instead of letting them go to waste, toss in any leftover bok choy you have hanging around, too.

Ingredients

6-7 cups green cabbage, finely shreddd

1/2 c. golden raisins

1/4 c. sliced green onion

3 TB flaked coconut

1/2 c. red or green seedless grapes, sliced lengthwhise (optional)

1/2 c. chopped dried apricot (optional)

1 c. shredded carrot

1/2 c. dried cranberries

1/2 c. chopped fresh parsley

 

Dressing: 

1/2 c. light mayonnaise (not fat-free)

1/2 c. light sour cream (not fat-free)

3 TB raspberry or cider vinegar

salt and pepper to taste

Directions

Mix all vegetables and fruit in a large bowl.

Mix the dressing ingredients and pour over the veggie/fruit mixture.

Stir.

Chill at least 30 minutes before serving.
